In Dominaria you could play Slimefoot, Thallid Omnivore, and 21 other random spells and have a decent shot at winning. However, consider the flip side - because so many of the cards are terrible, picking up “good” cards to fill out your deck becomes super-important even if it means abandoning your original plan. I've tried drafting round a P1P1 bomb and around a BR sacrifice synergy but both times found I had so few payoffs that I either didn't hit them or they just got removed. In contrast my 2 Dominaria drafts have been 5-3 and 7-1 and my single Amonkhet draft was 6-3 (worth noting these have all been quick drafts so are best-of-1 matches). I've never drafted a core set before and so far I've found that i'm really struggling with drafting Core 19 - i've Arena drafted 3 times and have gone 0-3, 1-3, 0-3.
